Bresaola della Valtellina IGP is a highly selected product and the tip of the hip, the most prized cut of the thigh of the cow.
Valtellina bresaola is a very nutritious salami, low in fat and rich in protein, iron and mineral salts.
This is why it is often included in slimming diets and in the diets of sportsmen and women.
The processing is carried out with the addition of minimal amounts of salt and natural flavourings.
There follows a maturing period of 4 to 8 weeks in the dry high-mountain climate, which gives the product its unmistakable characteristics.
The IGP mark (Protected Geographical Identification) guarantees the high quality of the product.
